9(c). Explain why tomatoes keep longer when kept in a moist jute bag in a clay pot.

Model answer

The clay pot is porous, so water in the moist jute bag can seep through its pores and evaporate from the outer surface. This evaporation extracts latent heat of vaporization from the tomatoes inside, cooling them and slowing down the ripening/decay process, so they keep longer.
