(i) Fermentation is the breakdown of sugar into alcohol and carbon (IV) oxide, usually with the aid of micro-organisms such as yeast: C₆H₁₂O₆ → 2C₂H₅OH + 2CO₂. (ii) The catalyst (enzyme) is zymase.
